Turnips and Black Barley with Miso Butter

Ingredients

  • 8 oz black barley (or regular)
  • pinch of salt
  • 1-2 lb turnips, peeled and finely diced
  • 1/2 cup white miso paste
  • 1 stick of butter (8 Tbsp)
  • 1-2 Tbsp fresh herbs, such as thyme
  • salt and pepper to taste
  1. Simmer the barley in lightly salted water until tender. Rinse and drain.
  1. In a steamer basket or colander set over boiling water, steam the turnips until tender but not mushy.
  1. Melt butter in a saucepan, add miso and herbs, and stir to combine.
  1. Toss steamed turnips and cooked barley in the miso butter until well coated. Allow to cook for about 5 minutes to reduce any released water.
  1. Season with salt and freshly ground pepper to taste. Note: miso is quite salty, so taste before adding salt.
