Ingredients
- 8 oz black barley (or regular)
- pinch of salt
- 1-2 lb turnips, peeled and finely diced
- 1/2 cup white miso paste
- 1 stick of butter (8 Tbsp)
- 1-2 Tbsp fresh herbs, such as thyme
- salt and pepper to taste
- Simmer the barley in lightly salted water until tender. Rinse and drain.
- In a steamer basket or colander set over boiling water, steam the turnips until tender but not mushy.
- Melt butter in a saucepan, add miso and herbs, and stir to combine.
- Toss steamed turnips and cooked barley in the miso butter until well coated. Allow to cook for about 5 minutes to reduce any released water.
- Season with salt and freshly ground pepper to taste. Note: miso is quite salty, so taste before adding salt.
